At the young age of 15, our chef started his career in the kitchen of a western restaurant and his culinary passion was awakened. In 2001, he moved to Miyakojima in Okinawa.
In 2003 he returned to Tokyo and trained in an Italian restaurant in Ginza. In 2005, he returned to Okinawa and opened his own cafe on a remote island. Then he joined the Okinawa Miyako Island Shigira-bay Resort Hotel in 2008.
He was a member of the team to launch four new restaurants. In 2010, he was assigned to Stockholm, as a chef to the Ambassador of Japan Embassy in Sweden.
In 2013 he retired from the embassy and started to training at Rutabaga (Michelin 1-star) and Matbaren (Michelin 2-star) in Sweden.
2014 was the year he moved to Singapore to work in a Japanese restaurant.
Thereafter, he helped start up a modern European restaurant, 999.99 in 2015. And joined a Japanese-Italian restaurant, Caffe B in 2017 as a chief advisor. In 2019, he was appointed Yamagata Prefecture, Higashine City Ambassador. In 2022, he opened Masa Saito Innovative as the owner-chef.
